Chewy Molasses Cookies

Chewy Molasses Cookies

I realize I'm a little late to make cookies for Santa, but due to the seasonal craziness that occurs at my place of work during the holidays I'm only able to make cookies after the holidays. I'm not sure if any of you are familiar with Dancing Deer Baking Co. but this my knock off version of their Molasses cookie.

3/4 c. melted canola margarine or unsalted butter
1/2 c. granulated sugar
1/2 c. packed light brown sugar
1/4 c. molasses
1 egg
1 tsp. pure vanilla extract
2 c. all purpose flour
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. ground ginger
1 tsp. cinnamon
(extra granulated sugar to roll them in before pressing onto sheet pan)

1. In your stand mixer add in your sugars, egg, vanilla with melted margarine and mix together.
2. In separate bowl sift your dry ingredients.
3. In 3 stages add your dry ingredients to your wet ingredients and mix. Mix until just combined don't over work the dough.
4. I use a mini ice cream scoop and roll the balls into some granulated sugar and then I place them on sheet pan. I press them down only slightly so they spread more easily when baking.
5. Bake @ 375 for 8 minutes, I also rotate pans 4 minutes in to ensure even baking.
